Turkey & Potato Soup

Recipe: Turkey & Potato Soup ******************************************************* 2-Cups cooked turkey meat, diced, 1-small onion, minced, 2- carrots, peeled and sliced in coins, 4- regular potatos, peeled and diced, 1-TLB butter, 2-TLB flour, 8-cups turkey stock(simmer some of the turkey bones and or dark meat in water for rich stock or soup started), or 3 tsp. turkey soup base mixed with the water. ********************************************************* Bring turkey stock(or water plus turkey soup base) to a simmer. Reserve 1 cup for thickening. Add the onion, carrots and potatoes, simmer 30 minute. In a small heavy saucepan, melt butter over low heat. Add the flour, stirring or whisking constantly to keep the flour from clumping. Add 1 cup of the soup stock slowly, stirring until smooth after each addition. Pour it back into the soup pot slowly, stirring as you do. The soup won't be really think, but it'll have nice color and body. Add turkey and simmer until potatoes are done and meat is heater through.
