Barbecued Striped Bass Steaks
2 pounds striped bass steaks
1/2 cup butter, metled
1/2 cup sesame seeds, toasted
1/3 cup cognac
3 tablespoons soy sauce
1 teaspoon salt
1 clove garlic, crushed
In a shallow baking pan, arrange steaks in a single layer and set aside. In a small bowl, combine remaining ingredients except sesame seeds. Mix thoroughly and pour sauce over fish and let stand for 30 minutes in a refrigerator, turning once.
Remove fish, reserving souce for basting. Place fish in a well-greased, hinged wire grill basket or broiler rack. Cook on a barbecue grill abut four inches from moderately hot coals for eight minutes. If cooking in a broiler, place rack about four inches form heat source and broil 6 to 8 minutes.
Baste fish with remaining sauce. Turn and cook for 7 to 10 minutes or until fish flakes easily when tested with a fork. Sprinkle sesame seeds over fish. Serves 4 to 6. |
