Crispy Crumb Fried Chicken:

2/3-cup finely crushed herb-seasoned stuffing mix,
3/4-teaspoon salt,
1/4-teaspoon pepper,
1/4-teaspoon paprika,
1-frying chicken (2-1/2 to 3 pounds) cut up or chicken pieces,
1/2-cup Shortening,

Combine stuffing mix, salt, pepper and paprika on waxed paper.
Moisten chicken with water. Coat with crumbs.
Heat shortening to 365 degrees in electric skillet or on medium-high in large heavy skillet. Fry chicken. Turn once for even browning.
Reduce heat to medium-low. Cook chicken for 30 minutes or until tender. Turn once for even browning. Drain on paper towels. Makes 4 servings.
