1/2 c. chopped onions
3 tbsp. olive oil
3 lb. boneless, skinless chicken breast
1/2 tsp. salt
1/8 tsp. pepper
1 clove garlic, minced
1 can (14.5 oz) of tomatoes
1 tbsp. vinegar
1/2 tsp. rosemary
1/2 tsp. sugar
Saute onion in 1 tbsp. olive oil in a large frying pan for about 5 minutes; remove and save for later.
Sprinkle chicken with salt and pepper and brown in same frying pan with remaining 2 tbsp. of olive oil and garlic.
Return onion to pan and add remaining ingredients. Cover pan and simmer 40 minutes or until chicken is tender.
