Bongos for Banana Bread

Recipe: Very easy to make and always a favorite. 5 tablespoons butter (REAL butter) 1/2 cup granulated sugar 1/2 cup firmly packed light brown sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups mashed, very ripe bananas 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon baking powder 1/4 cup whole milk 1/3 cup chopped walnuts (optional, but very tasty) Preheat oven to 350*. Spray bottom only of your pan. You can use a bundt pan, loaf pan, or muffin pan. In a large bowl with an electric mixer set at medium speed, beat the butter until light and fluffy. Add sugars; beat well. Add eggs and vanilla; beat until well blended. Add mashed banana; beat on high for 30 seconds. In another bowl, combine flour, baking soda, salt, and baking powder. Add this mixture slowly to the banana mixture; pour in milk and mix until creamy. Add walnuts to batter, if desired; mix well. Pour batter into chosen pan(s). Bake until golden brown and a toothpick inserted near center comes out clean. Time will vary depending on your choice of pan. Anywhere from 15 minutes with muffins, up to 30 minutes or so for a bundt pan. Keep an eye on it. My family loves this recipe. It is great for breakfast, and snacking. Very easy to slice up to take for picnics, or neighborhood barbeques.
