Sweet Potato Casserole Name: Michelle Welliver Base: Quantico Marine Base Recipe: You could almost eat this for dessert it is so good! Preheat oven to 350. Ingredients: 1 40oz. can sweet potatoes or yams, drained and mashed 2 c. sugar 1 c. melted butter 4 eggs, beaten 2 tsp. vanilla 2/3 c. milk Topping: 1 c. brown sugar 1/2 c. margarine or butter 5 tbsp. all purpose flour 1 c. chopped nuts (optional) Make topping by cutting butter into flour sugar and nuts. Mix sweet potatoes or yams, sugar, butter, eggs, vanilla and milk until well blended. Pour into 9x13 casserole dish and sprinkle with topping. Bake for 40 to 45 minutes or until golden brown.
