Kid's Love It Glazed Meatloaf

Recipe: This is a huge hit with the kids! The only meatloaf they actually like to eat! It's moist, not dry like typical meatloaf - the secret's in the lemon juice. 1 c. ketchup 2/3 c. brown sugar 2 tbsp. lemon juice 2 tsp. dry mustard 1 c. italian seasoned bread crumbs 1/4 c. diced onion or 2 tbsp. minced onion (less strong) 1 egg, beaten 1 beef buillion cube, crushed 3 tbsp. lemon juice 2 lbs. ground beef In small bowl, combine first 4 ingredients and set aside. In large bowl combine rest of ingredients and add in 1/3 cup of the ketchup mixture, reserve the rest. Form into a loaf and place in a large shallow pan or dish (can also be done in two loaf pans). Bake about 50 minutes to 1 hour (check so that you don't overcook it) Pour off fat. Pour reserved ketchup mixture over meatloaf and bake 10 minutes more. The kids always ask for more of the ketchup stuff so you might want to make extra!
