Strawberry Italian Ice

Recipe: Ingredients: 2 pints fresh strawberries, hulled and halved, 3/4cup unsweetened apple juice concentrate, 1 to 3 tablespoons of lemon juice, optional fresh mint for garnish. STEPS: Place first three ingredients in a blender or food processor; cover and process until smooth. Pour into an ungreased 8-in. square dish (round is fine too). Cover and freeze for 1 1/2 to 2 hours or until partially set. Spoon into a mixing bowl; beat on medium speed for 2 minutes. Return to dish; freeze for 2-3 hours more or until firm. Remove from freezer about 15mins before serving. To make this look elegant garnish with some mint. Servings 4-5 2 fruits for a diabetic This goes wonderful is a hot day!!!
