Recipe: Mashed Potato Candy, 1-cup potatoes, mashed (about 1 medium potato), 1-cup powdered sugar, may need more if not firm, 1-tablespoon vanilla, 1-tablespoon maple syrup, 1/2-cup butter, peanut butter, crunchy or smooth, Combine mashed potatoes, powdered sugar, vanilla, butter, and maple syrup until a dough forms. Wait until the potato are cool or the sugar melts and you will seem to have to add a lot more sugar. Roll the dough out to whatever thickness you like. Roll it to about 1/4 inch or thicker. Spread peanut butter (crunchy or smooth) onto the rolled out dough. Roll the candy up and wrap it in wax paper or plastic wrap. Put it in the refrigerator to harden it up a little. Slice and eat. Old Amish Potato Candy, 1/2-cup mashed potatoes, about 1 small, 2-teaspoons butter, softened, 4-tablespoons cocoa, 1/2-teaspoon vanilla extract, 4-1/2-cups confectioners' sugar, 2-cups flaked coconut, pecan halfs, In a large bowl mix potatoes, butter, cocoa, and vanilla. Gradually blend in sugar, add coconut. Knead til well mixed. Shape into balls, about 1-inch, and press a pecan into the center of each. Wrap in foil and store in airtight container.
