JIF PEANUT BUTTER CUPCAKES,
• 1 cup packed brown sugar,
• 1/2 cup Jif Peanut Butter,
1/4 cup butter or margarine, softened,
• 2 eggs,
• 1 teaspoon vanilla,
• 1 1/2 cups sifted all-purpose flour,
• 2 teaspoons baking powder,
• 1/2 cup milk,
• 16-ounce package (1 cup) semisweet chocolate pieces or 3/4 cup jelly,
Directions
• Preheat oven to 350ºF.
• Cream brown sugar, Jif and butter. • Beat in eggs and vanilla.
• Mix flour, baking powder and 1/2 teaspoon salt.
• Add to creamed mixture alternately with milk, mixing till blended.
• Spoon a rounded tablespoonful of batter into greased muffin pans or paper bake cups in muffin pans.
• Place 10 to 12 chocolate pieces or 2 teaspoons jelly in center of each spoonful of batter.
• Top with a second tablespoonful of batter. • Bake in 350ºF oven about 25 minutes or till done.
• Makes 18 cupcakes
