1 Can Cream Corn 8 Whole Large Eggs
1 Can Whole Kernal Corn 1 Lb Ground Beef
Brown beef and season to taste. I like to use Tony Chachere's Spice and Herbs because it has a very balanced flavor, but you can use any herbs and spices that you may have on hand. Drain whole kernal corn and mix in a bowl with cream corn. Beat eggs until fluffy, you may want to add 1/4 cup of milk to help the eggs. In a casserole dish or any oven safe dish, mix corn and beef together and pour egg mixtue over top. Bake at 350 degrees for 45-60 min or until set. Egg mixture will no longer jiggle.
This recipe is great for a tight budget and great for a large gathering. It keeps well in the refridgerator and tastes great cold too. The ingriedients can be doubled for a larger batch. |
