
Old Fashioned German Bean Soup |

2 ½ cups Great Northern beans, prepped for cooking according to package directions
1 leftover ham bone
1 cup diced onion
1 diced carrot
2 cups diced celery
2 cups diced raw potato
½ cup canned tomato puree
2 bay leaves
Salt, pepper, and minced garlic to taste
6 cups cold water
4 cups canned beef or chicken broth
2 tablespoons red wine vinegar
2 cups sliced garlic sausage, or meat from the ham bone
1 cup thinly sliced leek or green onion
In your biggest pot, simmer beans through broth (ingredients 1 through 11) until beans are tender. Remove 1/3 of the soup and puree it in a blender; return pureed portion to the soup. Remove bone from soup and cut off any meat that is left and put back into soup. Add the last 3 ingredients on the list and continue to heat a few minutes more. Serve this soup with a hearty bread and a great salad |
