Chicken Breasts Cooked in Butter |

4-6 small boneless chicken breasts
flour seasoned with salt and pepper
1/3 cup butter
Pound each chicken breast lightly to flatten them. Dredge the chicken in the seasoned flour, shake off any excess flour. Heat the butter in a large frying pan until it bubbles. Place all of the chicken in the pan in a single layer. Cook on medium to high heat for 4 minutes until they are golden brown. Turn the chicken over, reduce the heat to medium low and continue cooking until the chicken is cooked through, about 9 to 12 minutes. If the chicken starts to brown too much cover the pan for the last few minutes of cooking. |
