Banana Cinnamon Muffins

Recipe: Muffins: 2/3 cup sugar, 1/2 cup veggie oil, 2 eggs, 2/3 cup mashed very ripe bananas (2 small), 1 tsp vanilla, 1 + 2/3 cup flour, 1 tsp baking soda, 1/2 tsp salt, 1/2 tsp ground cinnamon, Topping: 1/4 cup sugar, 1/2 tsp ground cinnamon, 1/4 cup melted butter/margerine. Heat oven to 375. Line muffin tins with paper baking cups (12), Beat 2/3 cup sugar, oil, & eggs in bown with wire whisk. Stir in mashed bananas & vanilla. Stir in flour, baking soda, salt, & 1/2 tsp cinnamon just until moistened. Divde batter evently among muffin cups. Bake 17 minutes or until toothpick comes out clean. Immediately remove from pan to wire rack. Dip muffin tops in melted butter, then into cinnamon-sugar. Serve warm. Enjoy!
