Recipe: Ingredients: 2 cups biscuit mix 8 tbsp. butter, melted (no substitutions) 1 cup reduced-fat sour cream Directions: 1.Heat oven to 350 degrees. 2. Set aside a miniature muffin tin with 24 cups or two 12-cup tins, 3. Place the biscuit mix, butter, and sour cream in a large mixing bowl and stir with wooden spoon until the ingredients come together. Spoon the batter by the tbsp. into the ungreased muffin tins, filling the cups two thirds full. 4. Bake the muffins until they are light light brown, 15 to 18 minutes. Remove the miffin tins from the oven and place them on a wire rack to cool for 10 minutes. Then, run a sharp knife around the edges of the muffins and invert them onto the rack. Transfer them to a plate and serve at once.
