1 eggplant (peeled and cut into 4 slices 1/2" thick)
4 tsp oil
salt
pepper
1 large tomato cut into 4 slices
dried oregano
garlic powder
dried basil
favorite shredded cheese
Preheat oven to 425F
Brush both sides of eggplant with the oil and season as prefered with salt and pepper. Arrange on a baking sheet and bake untill browned and almost tender, 7-8 minutes, turning once.
Place one slice of tomato on each eggplant slice and season with oregano, basil and garlicpowder. Top with cheese and bake untill cheese melts.
Who likes can also top the eggplants with ham, salami, favorite vegetales.
