2 lbs. Chicken thighs or breast
1 handful raw noodles
2 zucchini
1 yellow squash
1/2 lrg. yellow or white onion
2 cloves garlic
3 roma tomatos
parsley or oregano to taste
shredded cheese (optional)
In large skillet, chop chicken into smaller pieces and brown with onion and garlic. In pot cook noodles to desired tenderness. Slice zucchini and squash. Add noodles, zucchini, squash, tomatos, spices, and cheese (if desired) to chicken skillet. Cook additional 3 - 5 minutes. Serves 5 to 6. |
