3 boneless chicken breasts
2tsp chili powder
3 cups chicken broth
2 14.5 oz Diced Tomatoes
1 package of red beans and rice
shredded Monterey Jack cheese with Jalapenos
Tortilla chips
Cook the package of red beans and rice. While the rice is cooking.
Cook the chicken seasoned with chili powder till done, then cut chicken up into bite size pieces. set aside.
Combine in a large sauce pan the 3 cups of chicken broth and undrained tomatoes.
Bring to boil.
Add chicken to sauce pan and reduce to Low and cook for 7 minutes.
When rice is done add it to the sauce pan too.
Continue to heat the soup until hot.
put into bowls and top with the shredded cheese and with totilla chips.
