This is so easy and very good! We have a newborn at home so this makes for a wonderful, hassell free meal.
Ingredients:
Boneless Thick Cut Pork Chop or Loin (one per person)
Frozen Corn
Black Beans Drained
Thick and Chunky Salsa
Optional:
Shredded Cheese
Sour Cream
Tortillas
In a crock pot or slow coker place frozen corn on bottom then beans then salsa. Take the pork and rub with seasoning on both sides if desired, and pan fry till tan on either side then place on top of salsa in crock pot and cook on low for about 6 hours.
Use as much veggies as your crock pot will hold or as much as you need for each person. it is ok if you have to over lap the pork or if you need to push it down into the salsa. I always flip min about an hour before they are done.
We like to top the corn, bean, salsa mix with shredded cheese and sour cream and roll up in white corn tortillas.
