1- 8 oz can of pineapple chunks
1 tray of chicken thighs (usually with 4 pieces)
1 med sz green pepper-chopped in cube shape
small onion-minced
2 cloves of garlic-chopped
salt and pepper
olive oil
Sautee onion and garlic in oil. Add chicken. Brown chicken about 5 minutes on each side. Add pineapple juice and chunks. Cover and let it boil for about 30 minutes on medium heat. Add green pepper. Simmer for about 10 minutes. Server over rice.
