Coyotie's Mexican Meatloaf

Recipe: 1 lb. ground beef or turkey 1 lg. egg 1/2 c salsa 1/2 c ranch dressing 1 pkg Goya brand crackers (maybe substitute with half a roll of Ritz crackers) Preheat oven to 350 degrees, mix all ingredients in a large bowl, transfer to a large loaf pan or even a meatloaf pan. Bake at 350 for at least 1 hr or until firm in the center*. Top with shredded cheddar cheese if desired and serve. *Meatloaf may still look pink in the center but this is normal due to the salsa and crackers.
