All you need:-1lb.boneless,skinless chicken breasts,cutin strips. -2tbsp.oil
-1pkg.(1.25oz.)of taco seasoning mix(any brand)
-1 can(141/2oz.)diced tomatoes
-1/3cup apricot or peach preserves
Directions:
1.Empty taco seasoning mix on a plate or into a plastic bag.Add chicken strips and toss to coat.
2.In a large skillet, heat oil over medium heat.Add chicken and saute 5-7 mins. or until done.
3.Stir in tomatoe and preserves.Cover and simmer 10 mins.
Serves 4.and you could eat this with cooked white rice,yellow squash
