Angel Hair Pasta with Chicken |

2TBL spoons of olive oil, divided
2skinless, boneless chicken breast, cut into 1inch cubes
1carrot, sliced diagonally, 1/4 inch
1(10oz)frozen broccoli, thawed
2cloves garlic minced
12oz angel hair pasta
2/3c chicken broth
1tsp dried basil
1/4 grated parmesan cheese
Heat 1TBL spoon of oil in medium skillet on medium, add chicken. Cook until done or brown (about 5min). Remove chicken, drain on paper towels. Heat remaining oil in same skillet, add carrots cook about 4 min. Add broccoli and garlic cooking about 2 min. Cook the pasta according to the package. Add chicken broth, basil and parmesan to the carrots, broccoli and garlic. Stir to combine. Add chicken, reduce heat and simmer for 4 min. Drain pasta, place in a large serving bowl, or plates. Top with chicken and vegetabel mixture. Serve immediately. |
