This will make about 4 servings depending on how much you eat.
PERBOILED Rice 3 cups
Green peas a quater lbs
Sweet corn 1 cup
Runner beans a quater lbs
Liver half pound(in its absence I use gizzards)
Chicken/beef broth
Curry powder
Seasoning
Vegetable oil
1 medium size onion
2 medium size green pepper
3 medium size carrots
Medium size cabbage about the size of the onion
Wash the rise in warm water and drain in a sieve to get rid of water. Set it aside. Use only perboiled rice
Wash the liver and put it on the stove to boil, add seasonings and onion as u like it. Add enough water to use as broth. While the liver`s boiling, dice the carrots, cut the runner beans(about 10mm long), shredd the cabbage. Keep each in separate bowls.
When the liver is done, allow it to cool and dice it (about 10mm cube). Heat some vegetable oil. Fry all your ingredients careful enough to be sure you dont loose the vitamins and other nutrients- liver, green pepper, green peas. Fry for about 3mins. Do not fry the carrots, cabbage and sweet corn.
Get them out of the oil and drain properly.
Heat some vegetable oil and fry the drained rice until its GOLDEN (BE CAREFUL NOT TO GET IT BURNT!!). Drain all the oil carefully and add the broth and some curry powder. Cover the pot. Check the level of water occassionally and be sure you dont have too much water in the rice at a time.( about 2cm above the rice level is ok) add water as required and check for salt. Add salt as required.
When its almost done add all the ingredients with the diced carrots, sweet corn and shredded cabbage. Cover and allow to simmer.
Allow to cool and serve with Chicken and apple juice |
