1 3/4c. sifted flour 2/3c. sugar
2 tsp. baking powder 2 eggs, well beaten
1/4 tsp. soda 1 c. mashed banana
1/2 tsp. salt 1/2 c. chopped nuts (optional)
1/2 c. shortening
Sift together flour, baking powder, soda and salt. Cream
shortening and gradually add sugar. Continue beating until light and fluffy. Add beaten eggs and beat well. Add flour alternately with bananas. Bat well. Add chopped nuts if desired. Bake in greased bread pan at 350 degress until toothpick inserted comes out clean, about 1 hour. Makes one large loaf or two small. |
