New Year's Good Luck Bean Soup

Recipe: New Year’s Good Luck Bean Soup 1 lb bag of 15 bean soup mix (discard flavoring packet) 1 smoked ham hock or ham bone 1 pound ham, diced 1 (14.5 ounce) cans diced or stewed tomatoes 1 (10 ounce) cans tomatoes and green chilies 1 medium onion, chopped 2 cloves garlic, minced 1 bay leaf 8 cups water 1 teaspoon parsley or fresh cilantro leaves (to taste) 1 tablespoon red wine vinegar 1 teaspoon salt 1 teaspoon chili powder 1 teaspoon ground cumin Rinse beans. Place beans in stockpot. Add water until it’s 2 inches above level of beans. Cover and soak overnight. Drain beans and add ham hock, diced ham, tomatoes, onion, garlic, bay leaf, 8 cups of water and remaining ingredients. Bring to a boil over medium-high heat. Cover and simmer 1 hour or until beans are tender. Remove ham bone and bay leaf before serving.. Serve warm.
