Banana Muffins -- For the past 15 years, these have become a staple favorite of our family. My children have helped since they were old enough to stir a spoon & now they often make these on their own. Especially yummy when using bananas that have become "too ripe" to eat.
1 egg
2 cups Bisquick baking mix
1-1/4 cups mashed ripe bananas (about 2 medium)
1/3 cup sugar
3 tablespoons vegetable oil
Heat oven to 400 degrees; grease 12 medium muffin cups, or line with paper baking cups. Beat egg slightly; stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups. Bake until golden brown, about 15 minutes. Best when served warm. (Can also be reheated for 15-20 seconds in microwave--great for breakfast the following day.) |
