Easy Sweet Potatoes |

3 Med Sweet Potatoes (Boiled with Peels on then peel when cooked)
2-3 sticks of softened butter (your preference how much)
1 1/2 cup sugar
2 1/2 tsp nutmeg
2 1/2 tsp cinnamon
2 tsp lemon extract
2 large eggs
1 bag small marshmallows
* can substitute 5 tsp pumpkin pie spice for the nutmeg and cinnamon
Combine sugar, nutmeg, lemon extract, eggs, and softened butter. Mix together until wet. Then beat into cooked sweet potatoes until smooth.
Bake at 350 for 1/2 hour
then add marshmallows and bake for 5-10 min.
