This is a VERY easy recipe to make. It freezes well so you can also split this recipe into two smaller pans and freeze one for later!
INGREDIENTS
3-4 Boneless, skinless Chicken Breasts (You can buy the packaged frozen kind and boil them frozen until cooked through or boil a whole chicken for white & dark meat and pick off the meat)
1 stick butter (or margerine)
1 can Condensed Cream of Chicken Soup
1 can Condensed Cream of Mushroom Soup
1 16 oz package of Pepperidge Farm CORNBREAD stuffing mix
DIRECTIONS
Boil chicken (save the broth)
Cut chicken into bite size pieces or pull chicken apart
Melt butter and pour into bottom of 9x13 baking pan or glass casserole dish
Sprinkle 1/2 of the stuffing mix on top of the butter
Place chicken pieces evenly on top of stuffing
Mix together the 2 cans of soup with 2 cups of the saved chicken broth - MIX WELL!
Pour over chicken
Sprinke the remainder of the stuffing mix evenly on top of soup
Bake at 350 for about 35-35 minutes until hot and bubbly and lightly browned.
VERY YUMMY!!! We live to serve with canned peas or blacked eye peas and a glass of milk!
Optional ingredients: You can add fresh mushrooms or other veggies (drained) if desired |
