Good Ol' Sweet Potatoe Pie

Name: Cynthia Corcoran
Base: MCAS Kaneohe Hawaii
Recipe: 1 Large can of sweet potatoes - drained 1/2 Cup Milk 1/2-3/4 Cup Brown Sugar 1/2 Teaspoon Salt 2 Tablespoons Cold Butter 1/2 Cup Flour 2 Eggs Cinnamon, Nutmeg, Cloves - if desired With an electric mixer, beat the sweet potatoes until smooth. Add the milk, brown sugar and salt and mix until well incorporated. Add the butter and flour and mix until just blended. Finally add the eggs and blend everything together until well mixed. If you like the pumkin spice flavor, now would be the time (with the eggs) to add a pinch or two of your favorite flavors from the spices cinnamon, nutmeg and cloves. Be careful not to overpower the dish with too much seasoning. Place in a greased pan and bake at 375 degrees until firm (at least 45 minutes if in a souffle dish, less if the dish is shallow). If traditional is what you want, bake in a 6 cup souffle dish. To check if the pie is done, insert a toothpick into the center and if it come out clean, it is done. Enjoy!
