2-8oz. blocks cream cheese-softened
2/3 cup sugar
1 tspn. vanilla
2 eggs
1 Tbspn lemon juice
Vanilla Wafers
combine ingredients with electric mixer until fluffy. Place one vanilla wafer in bottem of each muffin cup. Top with filling about half full. Bake 20-30 minutes, until tops are golden brown, at 350 degrees. Let cool on wire rack. Top with Cherry, Blueberry, or Strawberry pie filling. I use comstock filling. Refridgerate. Makes 2 dozen. |
