Recipe: 6 Green Peppers (Chile Poblanos) 2 pounds ground beef 2 medium sized potatoes 1/2 medium onion 1 can mexican recipe Hunts diced tomatoes 1 Lawry's mexican seasoning packet 2 cups water 3 eggs 2 cups corn meal 1/2 cup olive oil season salt cut top of green peppers (hole big enough to stuff) set aside brown ground beef with seasoning packet sautee onions with a bit of oil add sauteed onions , can of diced tomatoes to beef and stir for about 5 minutes add water and diced potatoes stir altogether and cover prepare coating: heat olive oil in deep pan but not to fry mix corn meal and about 2 tablespoons seasoned salt set aside on its own dish beat eggs til smooth using tongs, dip chili peppers in olive oil enough to coat them...then roll on egg mixture and then on corn meal place them on a casserole long rectangular dish stuff them with ground beef mixture cover dish with foil paper bake in oven at about 300 degrees for about 20 minutes Serve with rice and or regular brown gravy or picante sauce
