Polynesian Chicken

Recipe: 2 1/2 lb chicken pieces 1/2 C seasoned flour 1/4 C butter 1 scallion, sliced 1 can pineapple chuncks in syrup 2 tbsp brown sugar 1 tbsp vinegar 1 1/4 C water 1/2 tsp salt 1 1/2 C uncooked Minute Rice Coat chicken with seasoned flour. In large skillet, brown chicken well in butter. Drain pineapple but reserve 1/4 C of the syrup. Combine pineapple syrup, brown sugar, and vinegar in small bowl. Pour over chicken. Turn chicken and reduce heat. Cover and simmer till tender (about 20 minutes). Remove chicken. Add pineapple, water, salt and rice. Put chicken on top and bring to full boil. Cover and simmer until juice is almost gone. Let stand 5 minutes.
