Cheescake Cupcakes

Base: Fort Riley
Recipe: Two 8oz. packages of cream cheese 1 Cup Sugar 1 Tsp. Pure Vanilla 2 Eggs Box of Vanilla Waffers 1 Can of Pie filling. I prefer Cherry. Beat both packages of cream cheese in a bowl untill fluffy. Next add sugar and vanilla and beat well. Then add one egg at a time beating well after each egg. Line your muffin tins and put on vanilla waffer in the bottom of each liner. Then add your cheesecake batter to each cup. Bake at 350 degrees for 20 min. Let them cool completely. The middle of each cake will fall enough for you to have a perfect spot for your pie filling. ENJOY!!
