Recipe: 6-8 thin bloneless pork chops 1 small can diced tomatoes, drained 1/2-1 cup sliced mushrooms 1/2 cup chopped onion 1 cup shredded cheese 2 cloves garlic, chopped oregano or italian seasoning Brown the prork chops in olive oil over medium heat. Add onions, mushrooms and garlic, saute about 3-5 min. Add the tomatoes and seasonings, making sure the pork chops are submerged. let simmer about 5 minutes. Sprinkle on cheese and let melt. ( I like to use a mix of mozzarella and cheddar)
