Smothered Chicken

Recipe: 4 boneless skinless chicken breast 1/3 cup soy sauce 1/2 cup white onion, peeled and thinly sliced 1 green bell pepper, thinly sliced 1 tablespoon olive oil 4 provolone cheese slices In a large resealable bag, place chicken breasts, soy sauce, onion, and pepper. Marinate 30 minutes in the refrigerator. Heat olive oil in a large nonstick skillet over medium-high heat. Drain chicken and vegetables, discarding marinade. Place in skillet and brown for about 8 minutes; remove from heat. Place chicken breasts on a baking sheet. Top each chicken breast with part of the vegetable mixture and cover with a slice of cheese. Bake at 350F for 15 minutes or until cheese is golden brown and chicken is cooked. This is a great recipe. If you like mushrooms you can also add some sliced mushrooms.
