1 1/2 cups sugar, divided in half
2 cups self-rising flour
1 cup buttermilk
1 egg
1 cup vegetable oil
1 tablespoon cinnamon
Glaze:
1/4 cup confectioer's sugar mixed with 1 1/2 tsp milk.
Combine 3/4 cup of sugar and the cinnamon, set aside. Combine flour and remaining sugar, buttermilk, egg and oil. Stir just until combined. (Do not over mix or the bread will be tough). Grease bottom only of a loaf pan. Pour half the batter into pan; sprinkle with the cinnamon and sugar mixture. Top with remaing half of batter. Using a knife, go through the batter to swirl the cinnamon and sugar. Bake at 350* for about 30-45 minutes or until a tooth pick inserted in the center comes out clean. Remove from oven and cool about 10 minutes and then flip out onto a cooling rack. Drizzle with sugar glaze. |
