Chicken and Broccoli with Rice

Recipe: 2 boneless chicken breasts, cut into cubes 2 tbs oil 1/4 cup chopped carrots 1/4 cup chopped celery 1/2 cup chopped onion 1 pkg frozen chopped broccoli, thawed 1 can cream of chicken soup 2 cans cream of broccoli soup 2 cups milk 1 pkg (2 cups) shredded cheddar cheese 2 cups Minute rice (prepared as directed on box) salt and pepper to taste Brown cubed chicken in oil over medium heat until no longer pink. Add Carrots, celery, and onion. Cook until tender. Add broccoli and simmer until broccoli is hot and tender. Mix all soups and milk together in separate bowl. Add to chicken and vegetables. Mix well and heat until mixture comes to a simmer. Add all cheese and cook until melted. Blend in rice and cook until heated through. Add salt and pepper to taste.
