Chicken Adobo

Recipe: 3/4 Cup white vinegar 1/2 Cup " Marukin " low salt Soy Sauce 10 cloves garlic, peeled and smashed with back of a knife 8 bay leaves small piece of fresh ginger, sliced (about 2 tbsp.) 1/2 Cup Brown Sugar "light" 1 Tbsp. Pepper Corns Put all in gredients into a skillet or pan and bring to a boil. Add one whole cut up chicken or 8 chicken breasts. Bring to boil, cover and lower heat to a simmer. Cook 30-45 minutes, turning once. Remove meat, cook liquid another 30 minutes on low heat. Strain over a bowl keeping liquid. Dicard rest. Cut up meat and add meat to liquid. Serve over cooked rice or mashed potatoes. This works well with pork also.
