Fried Summer Squash |

1 Medium Squash sliced 1/4"
1 Egg
1/3 C. Milk or Evaporated Milk
Mix egg & milk with fork until frothy
1 part cornmeal (about 1/4 to 1/3 Cup)
3 parts flour
salt & pepper to taste
Add Oil in skillet, cover bottom 1/2 inch
several paper towels
Heat oil in skillet, soak sliced squash in milk/egg then dredge in meal/flour mixture. Fry slices in skillet about 2-3 min. each side until golden. Drain well on paper towel. (I use old newspaper under towel to help drain oil) To reheat left-over squash, broil or use toaster oven for 2-3 min. Very good Vegie dish here in the South! |
