Recipe: |
1 lb gr. beef
10 oz can enchilada sauce (mild or hot)
8-10 oz frozen corn kernels (may use 14 oz.can drained instead)
1 envelope taco seasoning
1/2 cup water
1 small can green chilies(1/4 cup chopped jalepenos for hotter variety)
16oz. can chili bean
2 pkgs (8-10)oz.corn muffin mix (most need and egg and water to make)
8oz chedder cheese
preheat oven to 400
Brown meat and drain add sauce,water, seasoning,chilies,corn and beans.Bring to boil simmer over med.heat 5 minutes. Make muffin mix as directed on pack.
Pour meat mixture in 9x13 inch glass pan. if muffin mix in to thick stir in a little water and pour over meat. bake 20 minutes top with cheese and bake till it melts. Enjoy no leftovers in my house
