Recipe: 1 baked pie crust (I use the frozen kind- faster) 1 c. sugar 3 tbsp. cornstarch 4 tbsp. strawberry gelatin (almost a whole pkg. if using reg. and the whole pkg if using sugarfree) 1 c. BOILING water 3 c. strawberries (I use frozen- you don't have to worry about them going bad before you get a chance to make the pie and they are juicier for the pie too) Coolwhip topping DIRECTIONS: in saucepan combine everything but strawberries, stir to dissolve. Bring to FULL boil and remove from heat. refrigerate until thick about 2hrs. Add strawberries, pour into pie crust. Spread coolwhip over top of pie. Refrigerate overnight for best results.
