Recipe: Zucchini Bread Ingredients: 3 cups all purpose flour 2 cups shredded zucchini 1 ½ cups packed brown sugar 2/3 cups vegetable oil 1 tablespoon baking powder 2 tablespoons ground cinnamon 1 teaspoon salt ¼ teaspoon ground nutmeg 4 eggs Directions: 1. Heat oven to 350 degrees, generously spray pan with cooking spray. 2. Mix all ingredients with spoon until well blended. Pour into pan. 3. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn pan upside down onto wire rack, remove pan. Cool completely on wire rack, about an hour.
