8 (6-7-inch) flour tortillas
3 boneless, skinless chicken breast halves (about 12
ounces), cooked and thinly sliced
1/2 cup Original or Spicy Bar-B-Sauce
1/2 cup green bell pepper, chopped
1/4 cup onion, chopped
4 ounces cheddar & Monterey Jack cheese blend, shredded
(1 cup)
Vegetable oil
Preheat oven to 425. Slice cooked chicken into 1-inch thin strips. Place chicken in a mixing bowl; add barbecue sauce, tossing gently. Chop bell pepper and onion. Place 4 tortillas on baking sheet or baking stone. Divide chicken mixture evenly over the 4 tortillas; top each with an equal amout of bell pepper and onion. Then add shredded cheese evenly over bell pepper and onion. Top each with a second tortilla. Lightly brush each tortilla with vegetable oil. Bake 8-10 minutes. Cut into wedges with a pizza cutter.
