Easy Enchiladas |

1 Pound of Beef 1 bag of vegetarian soy "meat"
1 pkg. of any taco seasoning (your favorite)
2 cans of enchilada sauce
1 can of refried beans (I love the fat free ones)
6 lg white or wheat flour tortillas
1 8 oz pkg of shredded cheddar or mexican cheese
salsa- any kind
Preheat oven to 350F
1- brown beef or warm up soy on a skillet( drain )
2- spread some enchilada sauce on bottom of large glass baking dish
3- take each tortilla (one at a time) and spread some beans, beef/soy, cheese, and salsa evenly, then roll the tortilla.
4-Place close together in the glass dish, and then pour enchilada sauce over top evenly.
5- Spinkle cheese overtop of them, as much as you want.
Bake at 350 just until cheese is melted.. About 10-15 minutes.. Watch them! You don't want the shells to burn on the edges.
