Recipe: Hamburger Taco Soup 1 pound ground beef 1 large onion, chopped (1 cup) 1/4 cup butter or margarine 1/3 cup all-purpose flour 1 1+ 1/4 ounce envelope taco seasoning mix 4 cups Beef Stock or beef broth 2 cups milk 1 15 and 1/2 ounce can red kidney beans, drained 1 14 and 1/2 ounce can tomatoes, cut up 1 cup shredded Monterey Jack cheese (4 ounces) Crushed corn chips Dairy sour cream ____________________________________________________ In a Dutch oven cook ground beef and onion till meat is brown and onion is tender. Drain off fat. Remove meat mixture from saucepan: set aside. ____________________________________________________ In the same pan melt butter or margarine. Stir in flour. Add taco seasoning mix, beef stock or broth, and milk. Cook and stir until thick and bubbly. ____________________________________________________ Stir in beans, undrained tomatoes, and meat misture. Heat though. Stir over low heat till cheese melts. Ladle into soupbowls. Pass corn chips and sour cream. Makes 6 main-dish servings.
