Bacon & Egg "Fried" Rice |

4 slices of bacon chopped and fried
4 cups of hot cooked rice
2 eggs scrambled
Mix all ingredients adding salt and pepper to taste. Great way to stretch a budget. Can also be made with left over cold rice and fried in the same pan as bacon and eggs were cooked. Invented out of necessity and became a family tradition for two generations now. My 6 kids love it with of all things ketchup mixed in, which is how my brother and I ate it as young children. |
