PUMPKIN MUFFINS:
Preheat oven to 400 F.
List#1
1 c. flour
1 c. sugar
2/3 c. wholewheat flour
2 tsp. pumpkin pie spice
1/8 tsp. ground cloves
1 tsp. baking soda
1/4 tsp. salt
List#2
1 c. canned pumpkin
2/3 c. applesauce
3 egg whites
List#3
1/2 c. chopped nut
1/2 c. raisins
Combine List#1 in a medium mixing bowl and stir together with wire whisk.
Combine List#2 in a med. mixing bowl and stir together. Add wet ingredients to dry ingredients.
Gently fold in List#3
Put into 12 prepared muffin cups, or muffin cups with paper inserts and bake for 17-20 minutes, until a toothpick inserted comes out clean.
