Recipe: (Personal recipe-not from a book) Ingredients: CAKE 1 cup vegetable oil 1 1/2 cup sugar 2 large eggs 2 1/4 cup plain all-purpose flour 1 tsp. salt 1 1/2 tsp. vanilla 1 cup buttermilk 1 tsp. baking soda 1 tbs. vinegar 1 tbs. cocoa powder 2 oz. (2 boxes) red food coloring Ingredients: FROSTING 2 boxes powered sugar 1 pakage cream cheese (softend) 1 stick butter (melted) 1 tsp. vanilla 1/2 cup pecans or walnuts (optional) CAKE: Heat oven to 325 degrees. In a large mixing bowl, combine all ingredients for . With a blender, mix for 2 minutes until smooth. Pour into 2 8inch cake pans. Note: dark coated, heavy metal pans work best! Bake approx 30-35 min (depending on oven). Check periodically with toothpick (when in comes out clean, cake is done). Cool on a wire rack. Frosting: Combine all ingredients in a medium bowl. Let sit for 5 mintues to condense. Spread on cake once it's cool.
