Tamale Pie

Recipe: Ingredients: 1 lb. ground turkey or beef 1 whole onion, chopped 1/2 cup salsa, mild (4 oz.) 1 package taco seansoning mix (1.25 oz.) 1 can tomatoes, diced, undrained (16 oz.) 1 tsp. chili powder 1 can black olives, sliced, drained (4 oz.) 1 can corn (Mexican), drained (16 oz.) 1 can kidney beans, rinsed, drained (16 oz.) 1 package corn muffin mix (8.5 oz.) 1 can green chiles, diced (4 oz.) 1 cup cheddar cheese, mild, shredded (4 oz.) Directions: 1) Cook ground meat and onion in large skillet until done. 2) Stir in salsa, taco mix, chili powder, diced tomatoes. 3) Cook over low heat 5 or 6 minutes until mixture thickens. 4) Stir in corn, black olives, kidney beans. 5) Pour mixture into large, greased baking dish. 6) Prepare batter for corn muffin mix according to package directions. 7) Stir in chiles and cheese. 8) Spread batter over meat mixture. 9) Bake at 350 degrees for 30 to 35 minutes or until crust is golden brown.
